Vegan Waffles x 2

Happy Swedish waffle day! March 25th is waffle day in Sweden and here are two vegan recipes to enjoy on this day.

Serves 6-8

400ml wheat flour
2 tsp baking powder
A pinch of sea salt
150g vegan butter (melted)
150ml plant-based milk
100ml plant-based cream
150ml sparkling water
Oil for the waffle iron

If you are making the spinach waffles also:
200g frozen spinach

In a bowl, mix together the dry ingredients. Add the butter, milk, cream and water and mix well. Heat the waffle iron and bake the waffles according to instructions. Serve with whipped cream, raspberry jam or ice cream.

For the spinach waffles, thaw the spinach and drain from excess water. Then add the spinach to the waffle mix and blend well. Heat the waffle iron and bake the waffles according to instructions. Serve with vegetables and sour cream.
