Vegan and Gluten-free Cornbread

Makes 8-10

Delicious sweet and gluten-free cornbread for breakfast or brunch. Serve with vegan cheese, vegan butter, chia jam or peanut butter.

200ml corn flour
150ml gluten-free oat flour
150ml rice flour
50ml coconut sugar
2 tbsp chickpea flour
1 tsp sea salt
2 tsp baking powder
½ tsp vanilla powder
75ml rapeseed oil
300ml plant-based milk

In a mixing bowl, mix together all the dry ingredients. Add the oil and milk and blend together. Bake in a muffin or cupcake pan in the oven (fan) for 20 minutes on 200 °C. Let them cool slightly before eating.
