Scrambled Oats with Spinach

Scrambled oats! A great alternative to scrambled eggs or tofu. Here's Vego Elements' version with hemp seeds and spinach. High on protein (oats: 13%, hemp seeds: 30%). To compare: Eggs: 13% protein.

Serves 2

75ml gluten-free oats
50ml hemp seeds
200ml plant-based milk
100g fresh or frozen spinach
1 tsp cumin
1 tsp vegetable stock powder
1 tsp turmeric
1 tbsp rapeseed oil
1 tsp kala namak salt (optional)
50ml walnuts

In a bowl, mix together the oats, hemp seeds and oat milk. Set aside for at least 1 hour. In a pan, fry the oat mix, spinach, vegetable stock powder and spices in the rapeseed oil on medium heat for about 5 minutes. Stir frequently. Lastly, roughly chop the walnuts and add to the pan. Serve with toast!
