Vegan Bluberry Muffins

Soft, moist and spongy muffins with lots of blueberries!

Makes 8-10

300ml wheat flour
100ml rice flour
250ml white sugar
½ tsp vanilla powder
2 tsp baking powder
150ml neutral oil
250ml plant-based milk
200ml frozen blueberries

Preheat the oven to 200 °C (fan). In a bowl, blend all the dry ingredients. Add the oil and milk and stir well. Lastly, carefully blend in the frozen berries. Fill the muffin cases 2/3 and bake in the oven for 20-25 minutes. Let cool slightly before serving.
