Vegan Buffalo Cauliflower Wings

Delicious vegan buffalo wings, perfect as a side for the bbq or with a green salad.

Serves 2-3

1 head of cauliflower

For the coating
200ml chickpea flour
1 tsp sea salt
Ground black pepper
1 tsp onion powder
½ tsp smoked paprika
1 tsp vegetable stock powder
1 tsp old bay spice (optional)
2 tbsp olive oil
150ml plant based milk

300ml panko crumbs (or bread crumbs)

For the bbq sauce
100ml tomato purée
1 clove garlic
1 tbsp agave syrup
1 tsp Dijon mustard
1 tsp apple cider vinegar
1 tsp smoked paprika powder
1 tsp onion powder
½ tsp sea salt
½ tsp cayenne pepper
½ tsp cumin
½ tsp turmeric
150ml water

Cut the cauliflower in medium sized chunks and rinse under water. In a large bowl, mix together the dry ingredients for the coating (except the panko crumbs), add the oil and water and stir well. Add the cauliflower to the coating mix and stir until all the cauliflower chunks are coated. On a plate, coat the cauliflower chunks in the panko crumbs. On a lined baking dish, spread out the coated cauliflower and bake in the oven (fan) for 20 minutes on 200 °C. Take out from the oven and brush the cauliflower with the bbq sauce. Put the cauliflower back in the oven and bake for another 10-12 minutes. Be careful not to burn the bbq sauce. Serve with a salad and a nice vegan burger!

Tip: you can replace the spices in the recipe with any of your favorite spices!
