Women’s Lib Cookies (Swedish Dream Cookies)

This is a traditional Swedish cookie called a ‘Dream’. We use ammonium carbonate to make them rise (and crack), but if you don’t have ammonium carbonate, you can also use baking soda. In the picture, I used pink pitaya powder to make them pink (but this is optional).

Makes 50

100g vegan margarine
300ml white sugar
2 tsp vanilla sugar
2 tsp pink pitaya powder (optional)
100ml neutral oil
1 tsp ammonium carbonate (sv: hjorthornssalt)
400ml wheat flour

In a bowl, mix together the margarine, sugar, pitaya powder and vanilla sugar until smooth. Add the oil little by little and mix until smooth. In another bowl, mix the flour and ammonium carbonate together, and then add it to the margarine mix. Form 50 balls and put them on a baking dish (use a baking sheet). Flatten the balls slightly with your thumb. Bake in the oven on 150 °C for 20 minutes. Let them cool before eating.
