Almond and Cardamom Waffles with Blueberry Ice cream

March 25 is Waffle day in Sweden! Here is my vegan and gluten-free recipe to celebrate this day.

Makes 6-8 waffles

Waffles
100ml almond flour
100ml gluten-free oat flour
100ml rice flour
50ml millet flour
1 tbsp chickpea flour
2 tsp baking powder
A pinch of salt
2 tsp ground cardamom
300ml plant-based milk
1 tsp apple cider vinegar
2 tbsp rapeseed oil
1 tbsp agave syrup
Coconut oil for the waffle making machine

Ice cream
500ml plant-based cream
50ml agave syrup
200ml frozen or fresh blueberries (Swedish, small)
1 tsp vanilla powder

To make the waffles
In a mixing bowl, mix together all the dry ingredients. In another mixing bowl, mix together the milk, vinegar, oil and syrup. Add the milk mix to the flour mix, and stir well. Make the waffles in a waffle making machine.

To make the ice cream
In a blender, mix together all the ingredients for the ice cream. Pour the ice cream mix into an ice cream machine and let it run to the ice cream is softly frozen.
