Vegan Saffron Blondies

This recipe is an original from Deliciously Ella, which I have modified some for Swedish Christmas traditions. Saffron is a traditional Swedish Christmas spice.

Blondies
1 can chickpeas
140g almond butter
100g almond flour
100g coconut sugar
60ml maple syrup
1 tsp baking powder
0.5g saffron
A pinch of salt

Frosting
80g cacao butter
2 tbsp almond butter
4 tbsp maple syrup
0.25g saffron

Preheat the oven to 175 °C (fan). Rinse the chickpeas. In a food processor, mix together all the ingredients until smooth. Pour the batter in a baking dish (with baking paper) and bake in the oven for about 30 minutes. Let cool completely. For the frosting, melt all the ingredients together on low heat and stir well. Let cool in the fridge for 30 minutes before adding on top of the brownies. Cut into squares and enjoy!
