Vegan Chocolate Pancakes

Yummy chocolate pancakes with a rich chocolate flavour. Vegan and gluten-free of course! In the picture served with homemade chia jam and vanilla ice cream from Oatly.

100ml rice flour
100ml buckwheat flour
50ml gluten-free oat flour (I use Urtekram)
½ tsp psyllium husk
1 tsp baking powder
1 tbsp coconut sugar
2 tbsp cacao powder
1 tbsp rapeseed oil
250ml almond milk (or other plant-based milk)
Coconut oil for frying

In a mixing bowl, mix together all the dry ingredients. Add the oil and the milk and stir well into a smooth batter. Heat the frying pan with some coconut oil and add the batter with a spoon into smaller (American sized) pancakes. Fry about 3-4 minutes on each side on a medium to low temperature.
