Oatmeal and Raisin Cookies

My vegan, gluten-free version of classic oatmeal cookies!

100ml rice flour
50ml gluten-free oat flour
100ml oats
200ml coconut sugar
1 tbsp tapioca flour
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla powder
1 pinch sea salt
100ml raisins
50ml almond butter
50ml cacao butter
50ml plant-based milk

In a mixing bowl, mix together the dry ingredients (including the raisins). Melt the cacao butter and the almond butter together on low heat. Now add the butter mix to the dry mix and stir well.

Form 12 balls and put them in a pan (on top of some baking paper). Bake in the oven on 200 °C (fan) for 10 minutes. Let them cool before eating. Enjoy!
