Crusted Sweet Potato Fries and Green Dip

Serves 2-3

Sweet potato fries with yummy rocket and garlic dip! Serve as a side dish with burgers, or with a green salad.

Fries
1 large sweet potato
50ml olive oil
100ml sunflower seeds
1 tsp sea salt
White pepper

Green dip
150ml cashews
3 handfuls rocket salad
2 cloves garlic
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp tamari
100g sundried tomatoes
100ml water
Sea salt
White pepper

Peel and cut the sweet potato into fries. In a household mixer, mix the sunflower seeds into a flour. In a bowl, mix together the oil, sunflower seed flour, salt, pepper and potato fries with your hands. Bake in the oven (fan) for 30 minutes on 200 °C. In a blender, mix together all the ingredients for the green dip. Mix until smooth.
