Almond Crusted Potato Fries with Raw Tarragon Ketchup

These home-made potato fries are so much tastier than restaurant fries! And the ketchup is delicious, you won’t go back to your old ketchup brand once you tasted this!

Fries
8 medium sized potatoes
50ml rapeseed oil
50ml almond flour
1 tsp sea salt
White pepper

Ketchup
100g sundried tomatoes
100ml water
1 medjool date
2 tbsp olive oil
5 cherry tomatoes
½ tsp sea salt
White pepper
2 tsp dried tarragon

Peel and cut the potatoes into fries. In a bowl, mix together the oil, almond flour, salt, pepper and potato fries with your hands. Bake in the oven (fan) for 20 minutes on 200 °C. Rinse the sundried tomatoes from the oil and soak them in hot water for about 20 minutes. Then rinse them from the hot water, and in a blender, mix together all the ingredients for the ketchup. Mix until smooth.
