Warm Brussels Sprouts Salad

Quick and easy recipe for a warm salad, perfect as a side dish or as a light supper together with a slice of bread.

500g Brussels sprouts (preferably fresh, but frozen also works)
½ onion
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp sea salt
White pepper

In a bowl, mix together the oil, vinegar, salt and pepper. Finely chop the onion and add it to the dressing. Clean and rinse the Brussels sprouts (if fresh). In a saucepan, boil the Brussels sprouts for about 7-8 minutes. Drain excess water and add them to the dressing. Mix well and let it cool for a couple of minutes before serving.
