Swiss Rösti

Makes 5-6 Rösti


This is my vegan version of Rösti. Deep and rich in flavour, and can be served as a side or main dish together with a salad.  Check my serving tips below for more inspiration.

500g potatoes
1 onion
1 tbsp chickpea flour
2 tbsp nutritional yeast
1 tbsp vegetable stock powder
3 tbsp plant-based cream
Sea salt
Pepper
Coconut oil for frying

Peel and roughly grate the potatoes. Peel and roughly grate the onion. In a bowl, mix together the potatoes and onion. In a separate bowl, add the chickpea flour, nutritional yeast, stock powder, oat cream, salt and pepper and mix well. Add the oat cream mix to the potato mix and blend well. Form medium sized patties, and in a frying pan fry the Rösti on medium to low heat for about 8 minutes on each side. Make sure that the potatoes are cooked all the way through.
