Vegan Russian Pasties with Activated Charcoal

(Makes 8)
Beautiful and very tasty Russian pasties, totally dark from the activated charcoal!

Dough
6 tbsp (90 ml) rapeseed oil
150ml oat milk
25g yeast
1 tsp sea salt
1 tbsp activated charcoal (optional)
2 tbsp aquafaba
500ml wheatflour

Filling
1 onion
1 clove of garlic
Olive oil
4 tbsp tomato purée
300g quorn mince (or other vegan mince)
1 tsp curry
1 tsp smoked paprika
A pinch of chili flakes
Sea salt

Sesame seeds for decoration.

Warm the rapeseed oil and oat milk on low heat (to luke warm) and dissolve the yeast in the oil- and milk mixture. Add salt, charcoal, aquafaba and then the flour. Knead into a soft dough and let it rise while you make the filling. Chop the onion and garlic and fry on low heat in olive oil until soft. Add the tomato purée, quorn and spices. Fry on low heat until cooked (5-10 minutes).

Cut the dough into eight balls. Place each ball on a lightly floured surface and roll each out to a round. Place 1/8 of the filling on each round, close them and pinch the edges together with a fork. Let rise for 15 minutes. Brush with water and sprinkle sesame seeds over the pasties. Bake in oven (fan) for 15-20 minutes in 225 °C. Let cool slightly before serving.
