Overnight Oats with Berry Mix

This is an easy favourite breakfast for spring and summer (instead of cooking oatmeal in the morning). You prepare it in the evening before bed and wake up to a fast and healthy breakfast in the morning. But it is also perfect as a snack in the afternoon.

Oats
350ml almond milk
250ml gluten-free oats
2 tbsp peanut butter
1 tbsp chia seeds
1 tsp cardamom or cinnamon (or favourite spice)

Berries
200ml raspberries
200ml (Swedish) blueberries
1 lime (juice and zest)
2cm of fresh ginger

Topping
Walnuts
Pumpkin seeds

In a bowl, whisk together the milk, oats, peanut butter, chia seeds and cardamom. In separate bowl, mix the berries, grated ginger, zest and juice from the lime. Leave everything overnight in the fridge. For breakfast top with walnuts and pumpkin seeds…and ENJOY!
