‘Lekker’ Peanut Butter Cookies

(makes 15)

150ml rice flour
100ml gluten-free oat flour
200ml coconut sugar
1 tbsp tapioca flour
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla powder
½ tsp sea salt
50g cacao butter
100ml peanut butter (smooth)
4 tbsp aquafaba
50 ml chopped peanuts

Mix together the dry ingredients, in a mixing bowl. Melt the together the cacao butter and the peanut butter, on a low heat. Now add the butter mix, aquafaba and the chopped peanuts to the flour mix and stir well.

Form 15 balls and put them in a pan (on top of some baking paper). Flatten them slightly. Bake in the oven on 200 °C for 10 minutes. Let them cool a bit before eating. Enjoy!
