Swedish Skagen Salad

This is a Swedish traditional salad with shrimps, named after the beautiful Danish region Skagen. Here’s my vegan version

100ml vegan mayonnaise
200ml vegan crème fraîche
½ red onion
1½ tbsp apple cider vinegar
90g tofu
1 can of seaweed roe (100g)
1 pot of fresh dill
Sea salt

Cut the tofu into small pieces and put them in a bowl and pour the vinegar on top. Stir gently and set aside. Finely chop the red onion and the dill. In a bowl mix all the ingredients together adding the tofu/vinegar lastly. Serve on toast or as a side dish for Easter dinner.
