Almond Coated Cauliflower with Chili and Coriander

Serves 2

1 small head of cauliflower

For the coating
100ml cashew nuts
50ml olive oil
100ml plant-based milk
1 tsp vinegar
½ tsp chili flakes
1 tsp sea salt
White pepper
50ml almond flour

For the topping
1 tsp dried coriander
1 tbsp sesame seeds

Cut the cauliflower in medium sized chunks and rinse under water. In a household mixer, put all the ingredients for the coating, except the almond flour, and mix until smooth. In a bowl, mix the cauliflower, the coating mix and the almond flour with your hands until all the cauliflower is covered. On a baking dish, spread out the cauliflower and sprinkle coriander and sesame seeds on top. Bake in the oven (fan) for 15 minutes on 200 °C. Serve as a snack or as dinner with a green salad.
