Mashed Potatoes and Green Veggies

2-3 servings

Creamy mashed potatoes with nutmeg, and an iron boost of fried green veggies!

For the potatoes
10-12 medium sized potatoes
200ml oat milk
50ml rapeseed oil
1 tsp ground nutmeg
1 tsp sea salt

Fried veggies
1 medium sized broccoli head
200g Brussel sprouts
½ zucchini
100g spinach
100ml oat cream
1 tbsp vegetable stock powder
Sea salt
Rapeseed oil for frying

Mashed potatoes
In a saucepan, boil the potatoes until ready (about 20 minutes). Add the milk, oil and spices and mash the potatoes with a fork or spoon. Whisk until smooth.

Green veggies
Slice the broccoli, Brussel sprouts and zucchini in small chunks. In a frying pan, fry the veggies on medium to low heat for about 8-10 minutes. Add the oat cream, stock powder, pepper and salt and let it simmer for about 5 minutes. Lastly, add the spinach and let it simmer on low heat for 1-2 more minutes. Enjoy!
