Three Plant-based Pastes

Serve these three pastes as a starter together with crisp bread or vegetable sticks, as a side dish or main meal together with fried polenta.

Sweet peanut butter
100ml peanut butter (make sure it is over 98% peanuts and unflavoured)
1 tsp agave syrup
A pinch of sea salt

In a bowl, blend the ingredients well together.

Tapenade
200g pitted, black  olives
1 clove garlic (grated)
1 tbsp capers
1 tbsp lemon juice
1 tbsp olive oil

In a blender, mix all the ingredients together. The tapenade should not be too smooth.

White bean paste
1 can of white beans (400g)
5 sundried tomatoes (soaked in hot water for at least 10 minutes)
A handful of fresh basil
1 tbsp lemon juice
1 tbsp olive oil
Sea salt
White pepper

In a blender, mix all the ingredients together until smooth.
