Quinoa and Avocado Salad

Serves 2-3


The perfect dinner for those hot summer evenings. Serve just as it is, or with bread on the side. Goes perfect with an ice tea on the side.

Salad
100ml quinoa
200ml water
2 avocados
½ cucumber
2 handfuls of rocket salad

Dressing
2 tbsp olive oil
1 tbsp apple cider vinegar
Sea salt
White pepper

Topping
Pumpkin seeds

In a saucepan, boil the quinoa in the water on low heat for 15 minutes. Drain excess water. Let it cool completely. In a salad bowl, mix the ingredients for the dressing. Put the quinoa in the dressing and let it soak while you cut the cucumber and avocado into small chunks. Add the cucumber, avocado and rocket salad to the quinoa and mix together. Top with pumpkin seeds.
