Sweet Potato Burgers Provençale

Perfect on the bbq as veggie burger, or eat it as it is with a salad.

2 medium sized sweet potatoes
100ml buckwheat flakes
1 can of pre-cooked chickpeas
2 tbsp tapioca flour
2 tbsp lemon juice
1 clove garlic
1 tsp each of thyme, rosemary, parsley, oregano and tarragon
Sea salt
Olive oil for frying

Rinse the chickpeas and in a blender mix them until smooth. Peel and roughly grate the sweet potatoes. In a bowl, mix all the ingredients together and combine well. Form middle sized burgers and in a frying pan, fry in olive oil on medium heat for about 7-8 minutes on each side. You can also brush the burgers with olive oil and put them on the bbq. Enjoy!
