Banana Bread with Walnuts

Plant-based, gluten-free banana bread, perfect for breakfast, brunch or a savory snack!

200ml gluten-free oat flour
200ml rice flour
150ml coconut sugar
2 tsp baking powder
½ tsp sea salt
4 middle sized bananas
100ml chickpeas
2 tbsp coconut oil
50ml almond milk

In a bowl, mix together all the dry ingredients. In a blender, mix the bananas and the chickpeas. Add the banana mix, the coconut oil and the almond milk to the flour mix, and blend well. Pour the batter in a baking pan. Bake in the oven (fan) for 45 minutes on 170 °C. Give the bread time to cool in the pan. Enjoy!
