Overnight Cacao Oats with Mango Purée

Another easy recipe for overnight oats! Cacao and mango goes great together and the twist of ginger wakes you up in the morning.

Oats
250ml gluten-free oats
1 tbsp chia seeds
2 tbsp cacao powder
400ml almond milk
1 medjool date

Mango Purée
200g fresh or frozen mango
1 tbsp lemon juice
1 cm of fresh ginger (peeled and grated)

Top with raspberries and blueberries (optional)

In a bowl, whisk together oats, cacao powder and chia seeds. Mix almond milk and medjool date with a hand blender until smooth, and then add the almond milk to the oat mix and whisk together. In separate bowl, defrost the mango (if frozen), add ginger and lemon juice, and mix together with a hand blender. Leave everything overnight in the fridge and serve for breakfast the next morning!
